Bill Cantrell was probably the most proficient of the boat racers that also ran at Indy. And Eddie Sachs had a go at it as well. I also seem to remember reading that Wilbur Shaw also gave the boats a try. Someone here will know the others. My guess would be that most of them would be pre-WWII or maybe even 1920s era. Also, Dick Simon has been involved in offshore powerboat racing in recent years.
I'll confirm that Wilbur Shaw was a big-league boat racer for a time- it's in his book.

As a slight aside, did Salt Walther ever win any proper race of any sort anywhere?
I think the Miller was used for boat racing, maybe someone in that era...
